Głównymi zainteresowaniami naukowymi profesora są: chirurgia gastroenterologiczna ze szczególnym uwzględnieniem leczenia wczesnego i zaawansowanego raka żołądka. Do światowej chirurgii profesor wprowadził zabiegi doszczętnej radykalnej limfadenektomii oraz metody diagnostyki węzła wartowniczego w chirurgii onkologicznej przewodu pokarmowego. Jest pionierem endoskopowego i laparoskopowego leczenia wczesnych postaci raka żołądka oraz zwolennikiem wprowadzenia robotów chirurgicznych i programów komputerowych dotyczących taktyki postępowania operacyjnego.
Profesor gościł w Polsce i we Wrocławiu kilka razy. Ostatnio w czerwcu 2009 r. brał czynny udział w międzynarodowym sympozjum poświęconym leczeniu raka żołądka, organizowanym przez II Katedrę i Klinikę Chirurgii Ogólnej i Chirurgii Onkologicznej AM we Wrocławiu. Wygłosił wykład na temat chirurgicznego leczenia wczesnego raka żołądka. Podczas ostatniego pobytu we Wrocławiu otrzymał Medal Akademii Medycznej im. Piastów Śląskich we Wrocławiu przyznany przez JM Rektora AM.
Profesor Masaki Kitajima jest propagatorem pionierskich osiągnięć prof. Jana Mikulicza-Radeckiego z zakresu endoskopii i chirurgii onkologicznej. Jako członek Światowego Towarzystwa Raka Żołądka wnioskował o przyznanie Polsce organizacji Światowego Kongresu Raka Żołądka w Krakowie, co było wielkim wyróżnieniem dla naszego kraju i chirurgii w Polsce.
W uznaniu zasług dla rozwoju kontaktów naukowych z polskimi chirurgami Zarząd Główny Towarzystwa Chirurgów Polskich postanowił podczas zjazdu w Łodzi we wrześniu 2011 r. nadać profesorowi członkostwo honorowe. (Polish)
